Disney Delights

This week is rainy and cold. A perfect time to think back and blog about the warm and sunny delight that was Disney World! I thought I didn't like sun. I was wrong. It was one of the most refreshing things in the world to feel Vitamin D on my skin and watch my freckles pop to life on my face. Our hotel was beautiful, with a balcony overlooking the river that I could watch from the luxury of my king sized bed. Here's the view from the balcony as I woke early each day to learn more about grace and spend time with Jesus:

Epcot was a short walk across the bridge away and Amy, Jenny, and I made good use of our park hoppers with that convenience. We managed to get to Epcot 4 times! One night, we spent a delightful evening and meal in Epcot's Mexico. Sometimes meals are so memorable, you are still thinking about them weeks later! And...to make matters even more fun, we got to watch the fireworks from the window of the restaurant. The margaritas made everything very amusing and when we left at 11:30p.m. there wasn't much of a wait on my favorite ride, Soarin'. That ride is so amazing. It lifts you up and you feel like you are on a helicopter flying over different places in America. The most amazing part--you can actually smell the scenes, pine scent in the Colorado ski mountains, oranges in California. LOVE IT! Anyway, here is a small recap of Mexico's meal:



Perhaps the most amazing margarita ever! I learned at WW this week that it's 8 pts but we won't think of that now!

Black bean soup. They bring you the bowl with the chips and creme fraise and pour the soup in right in front of you. I could eat that soup everyday and die happy.


My appetizer meal, one tostada, one empanada, and some other pasty I forget the name of. I mourn for that empanada even now. I will need to be eating one when I head to Disney in the future!
Another favorite memory from the trip is my walk with Amy at night around the Boardwalk where we stayed. We visited the other hotels, taking our time through the Yacht Club, where I bought the Mike Wazowski mug (Monsters Inc.) that I drink my morning tea/coffee in everyday just because it makes me smile. I'll post pics of that soon. I love that Amy's been my friend from the early days of high school. Some friendships really do stand the test of time. Love you girl!

For gluten-intolerant Disney travelers, don't be afraid to ask what is gluten free. I met two chefs on the trip who came out to talk with me and make sure everything was all GF and safe, and more than one accomodating waiter. Yes, I do think Disney lives up to it's reputation :) Where the magic happens.

I, of course, could not go home without a present for my two adorable nephews. Here's a pic of me posing with one Squirt. I thought it so fitting since not only were they so cute, Squirt happens to be my bro's fraternity name too.
